The secret to a tasty vegan trail mix is combining sweet and savory flavors along with crunchy and chewy textures. This mix checks all of the boxes. The pumpkins seeds (or pepita) and coconut chips give a satisfying crunch, while the dried cranberries and dark chocolate give this trail mix a hearty chewy texture. The roasted sunflower seeds bring on the salty goodness and the pecans simply tie everything together.
The best thing about trail mix is that you can pretty much use whatever nuts, dried fruit, and chocolate you have at home. Feel free to adapt this recipe however you’d like and make it your own!
Chocolate Coconut Pecan Vegan Trail mix
In a bag or airtight container combine about ¼ cup of each ingredient:
- Pumpkin Seeds (Pepita)
- Roasted Sunflower Seeds
- Dried Cranberries
- Roasted Coconut Chips
- Pecans (roughly chopped)
- Dark Vegan Chocolate (roughly chopped)
Shake to combine and try not to eat it all at once!
