When you’re looking for vegan backpacking breakfast options you’ll often find a sea of different oatmeal recipes. I love a hearty vegan oatmeal, but I do get sick of eating the same thing every morning. Although this is not a far departure from traditional oatmeal, vegan chia pudding is another satisfying breakfast option in the wilderness.
Chia seeds are packed with nutrients that are essential for backpacking. They are full of fiber, healthy fats, protein, omega-3s, and antioxidants! Chia seeds are perfect for backpacking because they are very light when dry. When you mix them into water or plant-based milk, they swell and absorb the moisture creating a pudding-like texture.
Chia pudding is easy to make, there is no cooking necessary, and requires just a few key ingredients. This recipe is very easy to adapt to different tastes as well! You can add just about anything as a topping. I personally like to add something with a satisfying crunch to contrast the vegan chia pudding texture. Try topping it with my vegan granola recipe or my vegan trail mix!
Vegan Backpacking Chia Pudding
2 tbsp chia seeds
1 tbsp coconut sugar
Coconut milk powder
1 tsp vanilla extract
1 cup filtered water
1. Combine all pudding ingredients into a container with a lid.
2. Stir until all ingredients are well combined and cover.
3. Allow the mixture to sit for 10 minutes and stir again.
4. Let chia pudding set for another 30-40 minutes or until the
chia has fully absorbed the water.
5. Top with vegan granola or fresh berries!
